Created by the inhabitants of the Alpine region, "Génépi" is a generic term that refers to a variety of aromatic plants from the Alps. Traditionally, mountain dwellers harvest these plants in August and macerate them in alcohol. Each mountaineer has their own secret Génépi recipe. For over 400 years, the Carthusian Fathers, with their vast experience in plant distillation, have developed a secret Génépi recipe. It involves several macerations and distillations, allowing the Alpine plants, through this unique process, to release all their aromas.

For dessert, when inspiration is lacking and time is short, we love to fall back on a recipe for molten chocolate cakes with Génépi from the Carthusian Fathers. Start by preheating the oven to 180°C (356°F). Meanwhile, melt 100g of dark chocolate and 50g of butter in the microwave for one minute. Mix the two ingredients thoroughly. Add 8cl of Génépi, two eggs, then 75g of granulated sugar, and finally two tablespoons of flour. Pour the mixture into individual molds and bake for nine minutes. Remove from the oven, wait five minutes before unmolding — and that’s it! Don’t forget to pour yourself another glass of Génépi with dessert!
